The Pitt Family has cultivated a robust and long-term relationship with Jack Merlo, leading to the recent expansion of their family-owned Hotel Sorrento, an icon of Victoria’s Mornington Peninsula.

Limestone echoes heritage charm

Mediterranean plants define coastal appeal

After a recent reimagining, the hotel now includes a day spa and beautifully landscaped areas around the pool and new wing, featuring a blend of cues from the original limestone building and the coastal location.

Collaborating with Six Degrees Architects, Jack Merlo enhanced the BBQ area with banquette seating and pergolas while incorporating diverse seating options, including sun lounges and bar-height chairs. The design emphasises natural materials like travertine and charred timber, complemented by a stunning 30m pool lined with ceramic tiles that echo the Japanese jade colour. Both the built environment and guest amenities are surrounded by carefully curated vignettes of local and Mediterranean plants, including olive, Indian hawthorn, bay trees, coastal rosemary, kangaroo vine, star jasmine and dwarf date alms to establish the hotel as a true coastal destination.
